Pancakes and Berries

I have perfected the pancake!! Super easy and yummy, a nice sweet treat for the morning. And of course the berries for those daily vitamin C and antioxidant needs. I used all organic ingredients and usually do when cooking. I will write about why in a later article.

Ingredients:
1 Cup Sifted Organic Flour
1 Cup Coconut Milk
2 tsp Baking Powder
2 Tbsp Organic Sugar
1/2 Tsp Sea Salt
3 Tbsp Melted real butter
1 large Organic Egg
2 Tbsp Grapeseed oil
5 strawberries
7 blueberries

Add all wet ingredients into one bowl: Eggs, milk, and melted butter. Whisk ingredients together.

Add all dry ingredients into another bowl: Flour, salt, baking powder, and sugar. Whisk ingredients together.

Add dry ingredients to wet ingredient and whisk together.
Heat 2 Tbsp grape seed oil on large griddle or skillet.
Pour pancakes about 4 inches wide and cook till about 4 bubbles arise and flip over pancake.
If the pancake is still too light flip it over until it is golden.

Cut strawberries into quarters and add on top of golden pancakes. Add blueberries and whatever other topping to your liking (not too much syrup).

Suggestion. When biting the pancake get a piece of the berries along with the pancake. Guaranteed Delightful.
